Recipes From A Normal Mum: One Pot Bacon & Pea Pasta

This week, Holly's keeping washing up to a minimum with this one pot pasta dish the whole family will love

"I am all about minimising washing up.

"I can’t abide those recipes where everything seems so perfect and speedy and delicious - until you glance at the sink and see you’ve used half the contents of your kitchen in the pursuit of dinner.

"If dinner takes 10 minutes to prepare but leaves you with 45 minutes of cleaning then that’s certainly not winning in my book.

"So here we have a truly one pot pasta dish.

"You fry off the onions, bacon and garlic in the saucepan, add the sauce ingredients and then simply let it boil away until the sauce and pasta are all perfectly cooked. I’ve added frozen peas just before the end to up the vitamin C content, but really, add whatever you have in the fridge/freezer/store cupboard.

"Serve it just as it is, or if you feel like making more of a banquet, what about garlic bread and a large green salad?

"Enjoy!"

Holly Bell's One Pot Bacon & Pea Pasta Recipe:

Ingredients:

Serves 4:

  • 1 tbsp olive oil

  • 1 medium onion, peeled and roughly chopped

  • 300g bacon, roughly chopped

  • 3 cloves garlic, peeled and crushed

  • 1 x 400g tin chopped tomatoes

  • 1 litre cold water

  • 500g spaghetti

  • 200g frozen peas

  • 100g grated hard cheese such as Parmesan or Grana Padano

  • 1 tsp ground black pepper

Method:

  1. Heat the oil in a large saucepan over a medium heat. Add the onion and fry for a couple of minutes until starting to soften.

  2. Add the bacon, stir well and fry for a few minutes until cooked through. Add the garlic and fry for a further minute before adding the tomatoes.

  3. Pour over the water and bring to the boil (without a lid).

  4. Add the pasta and once it begins to soften mix into the sauce. Boil for 6 more minutes until the pasta is al dente and the sauce has reduced to almost nothing, before stirring through the frozen peas.

  5. Add the lid at this point, remove from the heat and let the residual heat cook the peas for 5 minutes. Serve from the saucepan with a little grated cheese and freshly ground black pepper.

Extra tips...

  • No bacon? Try sausage, chorizo, chicken strips, prawns or even some char grilled veg.

  • No peas? Try any veg you fancy. Tinned sweetcorn, chickpeas, chopped fried aubergine, frozen spinach, sliced red peppers. Clear out the veg drawer!

  • Fancy something a little spicier? Add some fresh chilli or powder when you add the tomatoes.
