Make meat free Mondays something to look forward to thanks to this simple yet scrumptious dish from Switch, which is characteristic of provincial cuisine served throughout China.

Recipe: Vegan Vegetable & Tofu Stir-Fry

Ingredients:

• 8 shiitake mushrooms, cut into quarters

• 1 packet of tofu, cut into cubes

• 1 garlic clove, finely chopped

• 1 medium onion, sliced

• 8 baby corn, chopped

• 1 green pepper, sliced

• 3 tbsp vegetarian oyster sauce

• 1 tbsp sesame oil

• 1 tsp light soy sauce

• 1 tsp dark soy sauce

• 1 tsp caster sugar

• 3 tbsp water

• 2 pinches of salt

• 1 tbsp sunflower oil

Method :

  1. Combine the black soy sauce, about 1 teaspoon of the sesame oil and the caster sugar in a small bowl and then add the shiitake mushrooms, coating them thoroughly before leaving to marinade for 10 minutes.

  2. In the meantime, fry the tofu in a little sesame oil for a few minutes. Once done, set aside.

  3. Mix the water, vegetarian oyster sauce, remaining sesame oil, sugar and a pinch of salt in another small bowl to make the sauce, then set this aside.

  4. In a large frying pan, heat 1 tablespoon of the sunflower oil and fry the garlic over a high heat for two to three minutes until aromatic.

  5. Add the onion and another pinch of salt, and continue to stir-fry for three to four minutes until softened. At this stage, add in the tofu, shitake mushrooms, green pepper and baby corn, as well as the sauce. Stir the ingredients together, cover and allow to simmer gently for one or two minutes until piping hot.

  6. Serve in large bowls with white or brown rice.
