Prick the potato with a fork and place directly on the oven rack or on a baking sheet.
Cook the potato for 45 to 60 minutes, until the skin is crispy

Add home-made salsa made from 2 tomatoes, 1/2 a red onion, 1 garlic clove, lime juice, chilli and coriander
TIP: Ready-made dips often have sugar added, so make your own. The riper the tomatoes the sweeter the salsa!
