In a medium bowl, beat the eggs and season with salt and pepper to taste.

Pour the milk into a medium heavy-bottomed pan and warm over a medium heat.

Pour in the eggs and cook, stirring continuously with a spatula.

Remove the pan from the heat and stir in the salmon and ricotta.

Decorate the salmon and eggs with chives before serving.
