Although we often associate stuffed peppers as a quick-fix veggie recipe, there's no reason meat lovers can't put a spin on the dish, too.

Recipe: Mince Beef & Olive Stuffed Peppers
Ingredients:
(serves 2)

1 red pepper

1tbsp olive oil

½ a tin of chopped tomatoes

4 chopped olives

1 onion
-
1 garlic clove
-
200g minced beef
-
1tsp cumin
-
1tsp parsley
-
1sp salt

1tsp pepper
Method:

Preheat oven to 180 degrees.

Lightly oil a baking dish with 1tbsp of butter.

In a frying pan heat 1 tbsp olive oil then add 1 small chopped onion and a chopped garlic clove. Cook for 2 minutes.

Add 200g minced beef and 1 tsp of cumin, parsley, salt and pepper.

Cook until meat is browned and stir in half a tin of chopped tomatoes and 4 chopped olives.

Halve and scoop the seeds from a red pepper.

Stuff the meat mixture into the peppers and place in the baking dish.

Cook for 30 minutes and serve.
