RECIPE: Egg and spinach on rye

Get a healthy dose of protein with this 5:2 fast day breakfast recipe.

Place the spinach with 1tbsp water, into a pan on a medium heat and wilt for 1-2 minutes

Meanwhile, toast the rye bread and poach the egg.

To serve, place the wilted spinach onto the toast and top with the egg.

Season with salt and pepper to taste.
