Recipe: chicken tikka, pilaf and riata
Who needs a takeaway when you can make this chicken tikka, pilaf and riata recipe?
- Blend together the Tikka Masala paste, Alpro Simply Plain, lime juice and chopped coriander. Pour the mixture over the chicken and leave to marinate for about an hour.
- Thread the chicken onto skewers and grill until cooked through.
- To make the Pilaf rice, add the rice, tumeric, cinnamon and a litre of water. Cover and boil for 10 minutes over a low heat, until rice is cooked through and water has disappeared.
- To make the Riata, mix together the cucumber, mint, lemon juice, Alpro Simply Plain, Alpro Soya Single cream, salt and pepper into a smooth paste.
- Serve skewers with the rice and add lashings of Riata sauce.
