RECIPE: Bombay beef curry

This curry is perfect for 5:2 fast days- and tasty enough for all the family to enjoy.

Spray a large saucepan with some low calorie spray and add the onion, garlic, carrots, and aubergine and gently fry until softened.

Add the ginger, spices, tomato paste and beef and mix thoroughly to coat.

Add the chopped tomatoes and stock and season with salt and pepper.

Bring to a boil, reduce heat to low and then add the coconut milk

Cover and simmer for approx 45mins-1 hour.

Serve with rice or your choice of side.
