RECIPE: Blueberry sour cake from Celebrity Masterchef Liz McClarnon

Former Atomic Kitten and Masterchef winner, Liz McClarnon, has shared this great recipe with us that will go down perfectly on Jeans for Genes Day. This quick and easy recipe is super tasty and a great way to raise extra money as part of a bake sale or to just enjoy among friends and family.   1. Whisk the flour, butter, eggs, baking powder and vanilla until well mixed.

  2. Mix in half of the sour cream (60g) and then half the blueberries

  3. Grease a cake tin, pour/spoon in the mixture into it and level it out.

  4. Bake in the oven at 160c (fan oven) or 180c (conventional oven) for 55 minutes

  5. Leave to cool while you make the icing.

  6. To make the icing, simply mix the cream cheese, icing sugar and the rest of your cream cheese (60g) until smooth and when the cake is cooled spread evenly over the top of the cake.

  7. To finish, garnish with the rest of your blueberries.
