Tasty office lunches that can be whipped up in the morning

1. Mediterranean Tuna Salad

Transport yourself to a tropical Mediterranean island with this hearty tuna salad, which is high in protein - a nutrient needed to maintain strong bones and muscles.

Ingredients for 1:

  • Half a small red onion, thinly sliced

  • 1 teaspoon red wine vinegar

  • 1/4 cucumber, cut into chunks

  • 25g cherry tomatoes, halved

  • 1/2 baby cos lettuce, leaves torn into pieces

  • 40g marinated feta cheese, drained

  • A handful of olives

  • A sprinkling of dried oregano

  • 1 x 160g can Princes Tuna in Springwater, drained

Method:

  1. Put the red onion and cucumber into a tupperware and add the red wine vinegar. Leave to marinate for 10 minutes while you eat breakfast.

  2. Add all the remaining ingredients apart from the tuna, tossing together to combine.

  3. Add the tuna to the salad, breaking it up into large chunks. Store in the fridge at work and consume when hungry!

2. New York Tuna Filled Bagels

Most of us don't consume enough fish in our diets (we need 2 full portions a week!), so we've put this easy-peasy, tuna-based lunch in our recipe recommendations. This meal is super tasty - and not to mention filling. Trust us: you won't be reaching for that afternoon snack anymore...

Ingredients for 1:

  • 1 x pot Princes New York Tuna Filler

  • 1 x bagel

Method:

  1. Slice a New York style bagel and top the base with crispy lettuce leaves such as Little Gem.

  2. Add New York Tuna Filler and top with the bagel lid. Then wrap in foil and consume later!

Top tip: For a little more “crunch“ try toasting the split bagels first.

3. Speedy Mexican Jacket Potatoes

Imagine munching on a delicious, warm jacket potato with a dreamy Mexican filling for lunch. Now make that imagination a reality by prepping the below for work!

Ingredients for 1:

  • 1 large baking potate, scrubbed

  • 1 x 100g cans Princes Tuna Fillers - Mexican

Method:

  1. Prick the potato, then microwave on full power for 6-7 minutes. Turn them over and microwave on full power for a further 6-7 minutes.

  2. Check that the potato is tender – if not, microwave for a further 1-2 minutes, or until done.

  3. Split the cooked potato and place into a tupperware. Spoon the Mexican Tuna Fillers into the potato. Et voilà!

4. 10 Minute Mackerel Biriyani

Mackerel is a great option for lunch meals, especially considering the fact that canned mackerel is high in Omega 3. And when mixed with rice and veg, it'll make for a filling lunch that will help get you through the day.

Ingredients for 1:

  • 1 x 125g can Princes Spicy Tomato Mackerel

  • 1 x 125g microwave long grain rice

  • Handful of green beans, trimmed and cut into 2cm lengths

  • 1/4 red pepper, deseeded and chopped

  • 25g frozen peas

  • Salt and pepper

  • Coriander leaves

Method:

  1. Tip the can of Princes Spicy Mackerel onto a plate and break into large chunks with a fork. Then set this to one side.

  2. Snip open the pack of rice and microwave for 1 minute on High. Tip it into a microwaveable tupperwear and stir in the beans, red pepper, frozen peas. Microwave on High for a further 1 minute 20 seconds.

  3. Add the chunks of mackerel with the sauce, season with a little salt and black pepper and stir the ingredients together gently. Sprinkle the chopped coriander leaves on top. Eat cold or it up warm up in the office.

5. Mackerel, Avocado and Tomato Salad

For a tasty lunch that's high in Omega 3 and good fats, whip up this exotic salad up in the morning and keep it refrigerated until you're ready to eat.

  • 125g can Princes Mackerel Fillets in Olive Oil

  • 1 tbsp lemon juice or cider vinegar

  • Salt and freshly ground black pepper

  • 1 small bag mixed salad leaves

  • 2 spring onions, thinly sliced

  • 1 tomatoes, sliced into wedges

  • 1 small ripe avocado, pitted, peeled and sliced

Method:

  1. Drain the olive oil from the can of Princes Mackerel Fillets into a tupperware. Break the fish into chunks and set aside.

  2. Mix the lemon juice or cider vinegar into the olive oil, adding a pinch of salt and pepper.

  3. Add the salad leaves, spring onions, tomatoes and avocado to the tupperware, tossing gently to coat with the dressing. Place the chunks of mackerel on top and then count down the hours until you can tuck in!
