1 – In a medium-sized pot, cook the quinoa by following the instructions on the packet, until the water has absorbed and the quinoa is fluffy.
2 – Add the black beans and sweetcorn to the pot. Mix to combine, then transfer to the salad bowl and add kale and onion. Stir to combine.
3 – Make the dressing by mixing together all the ingredients. When ready, pour over the salad and serve!
