1 – Cook the rice in a saucepan of boiling water with a pinch of salt, according to the packet instructions, until all the water has been absorbed and the rice has the perfect texture.
2 – Meanwhile, steam or boil the sweet potato, until it's soft. Mash it with the 2 cloves of garlic, tahini, half of the juice from the lemon and a little salt.
3 – When the rice is cooked, stir in the remaining juice from the lemon.
4 – Place the black beans, spinach, tamari and the rest of the garlic into a pan and sauté for 2mins, until the spinach has wilted and the beans are hot.
5 – Mix together the dressing ingredients in a mug, then place everything in a bowl and pour the dressing over it.
