This tasty vegan dish is super-easy to make and uses just four ingredients...

Ingredients

1 x 400g can of black beans,

275g sweetcorn,

1 x sweet potato, cubed,

250g salsa,

Your choice of rice or bread, to serve

  1. Boil the sweet potato until cooked, then set aside.
  1. Mix black beans, corn and salsa in a large pot on high heat. Cover and let simmer for 20 minutes.
  1. Stir in your sweet potato and enjoy with your choice of rice or bread on the side.
