1)If serving with rice, put this on to heat, following the instructions on the packet.
- Make the sauce – add all the ingredients and blend. Add a touch of water to thin if necessary and season to taste. Set aside. If you don't have time, you can always top with avocado and tomatoes mixed together instead.
- In a pan over a medium heat, add the black beans, salsa and cumin. Heat for 5 mins, stirring occasionally, until heated through (mash beans for a creamier filling, if desired)
- Warm the tortillas, if desired. Assemble the tacos – spoon the black bean mixture in the centre of the tortillas, drizzle a small amount of the sauce on top and add your toppings. Serve immediately with rice, if desired
