#MeatFreeMonday: Black bean tacos

These tacos can be made in just 15 minutes and make a brilliant mid-week meal

1)If serving with rice, put this on to heat, following the instructions on the packet.

  1. Make the sauce – add all the ingredients and blend. Add a touch of water to thin if necessary and season to taste. Set aside. If you don't have time, you can always top with avocado and tomatoes mixed together instead.
  1. In a pan over a medium heat, add the black beans, salsa and cumin. Heat for 5 mins, stirring occasionally, until heated through (mash beans for a creamier filling, if desired)
  1. Warm the tortillas, if desired. Assemble the tacos – spoon the black bean mixture in the centre of the tortillas, drizzle a small amount of the sauce on top and add your toppings. Serve immediately with rice, if desired
