Healthy Junk Food: Create delicious paleo chocolate and baked treats – without the calories

Healthy chocolate

Ingredients

  • 70g grated cacao butter

  • 1/2 cup raw cacao powder, sifted

  • 2 tbsp coconut nectar

  • Pinch of sea salt

  • Seeds from 2 vanilla pods

You will also need a set of chocolate moulds - we're thinking Easter-friendly bunnies and egg shapes!

Directions

  1. Melt cacao butter in a small metal or glass bowl over a saucepan of simmering water

  2. Once melted, remove from heat and whisk in cacao powder, coconut nectar, salt and vanilla seeds

  3. Fill chocolate moulds with mixture

  4. Refrigerate until set

Tip: If you prefer milkier chocolate (not so dark tasting) then simply decrease the amount of raw cacao powder used.

Healthy Hot Cross Buns

Healthy Hot Cross Buns

Ingredients

(For the bun)

  • 1 cup Tapioca starch

  • 1/4 cup Buckwheat flour

  • 1/4 cup sweet potato starch

  • 1/4 cup coconut flour

  • 1/4 coconut sugar (blended to powder)

  • 1 tbsp cinnamon

  • 1 tsp baking powder

  • 1 tsp Xantham Gum

  • Pinch of salt

  • 1/4 cup coconut oil

  • 100ml coconut milk

  • 3 large eggs

  • 1 cup sultanas

(For the cross on top)

  • 3 tbsp Tapioca flour

  • 1 tbsp coconut flour

  • 3 tbsp water

  • 1 tsp coconut nectar

(For the optional glaze)

  • 2 tbsp boiling water

  • 2 tbsp coconut sugar (blended)

Directions

  1. Preheat oven to 180C

  2. Mix all bun ingredients (minus the sultanas) in blender or bowl

  3. Stir in sultanas

  4. Shape your buns into Hot Cross Buns (they will not rise)

  5. Put each bun on a baking tray lined with paper

  6. Mix your cross mixture and add to a piping bag

  7. Pipe the cross onto your buns

  8. Place Hot Cross Buns into oven (turn it down to 150C) and bake for 30 - 40 minutes

  9. Poke with a toothpick at 30 mins to see if they are cooked in the middle

  10. Glaze when they're out of the oven if you want to

  11. Serve hot or cold

Tips: These don't have preservatives, so cook them just before you want to eat them. And, if you can't eat eggs, swap them for 3/4 fresh pureed apple or pears.

****Exactly the same as recipe as the traditional Hot Cross Buns, except:

  • Instead of cinnamon, use cacao powder

  • Instead of sultanas, use 1 cup of 'healthy chocolate' pieces

Directions

  1. Preheat oven to 180C

  2. Mix all bun ingredients (except chocolate) in blender or bowl

  3. Shape your buns into Hot Cross Buns (these won't rise)

  4. Stir in chocolate pieces

  5. Put each bun on a baking tray lined with paper

  6. Mix your cross mixture and add to a piping bag

  7. Pipe the cross onto your buns

  8. Place Hot Cross Buns into oven (turn it down to 150C) and bake for 30 - 40 minutes

  9. Poke with a toothpick at 30 mins to see if they are cooked in the middle

  10. Glaze when they're out of the oven if you want to

  11. Serve hot or cold
