The 33-year-old model once managed to blag her way into Mariah's Halloween party in Chelsea, and confessed it was once of the best nights she's ever had.
She told the Mirror: "I once dressed up for Mariah Carey's Halloween party. It was the best time of my life. I'm obsessed with her.
"It was years ago in The Collection in Chelsea. I blagged my way in with my friends, not only that, but I ended up sitting on her table. She gave us tickets to her show the next day in Manchester, we'd been the previous night in London."
Mum-of-two Nicola said that, while Mariah, 44, was as fabulous as you'd expect, she spoke about herself in the third person.
She continued: "Her people called us the next day and we went backstage. She was fantastic but she would about herself, she'd be like. 'Do you want to drink Mariah's champagne?' I was like, 'Yes I f***ing do!'
"She was unbelievable, and was so nice, she was out there on another level, she had an ego, but she was so kind to everyone. I love her. We weren't allowed phones in there so I don't have any photos but it was brilliant."
Nicola also hit out at anybody criticising the diva for her recent weight gain, insisting "She's Mariah. She can look however she wants!"
Opening up on her recent separation from husband Tom Williams, Nicola said if a man wants to date her he needs to woo her.
She said: "Now I want anything that involves roses and champagne!"
