Although this may sound like the most disgusting thing you’ve heard scientist get up to in recent years, food tasters said the sausages were delicious.
And, according to the research - published in the February issue of the journal Meat Science – the baby poo could actually make our sausages healthier than ever before.
In recent years, scientists have discovered that foods such as yogurt which contain live probiotic bacteria can have a wide variety of health benefits.
They can help burn away belly fat, treat depression, lower inflammation, prevent urinary-tract infections and fight infant gastrointestinal disorders such as constipation.
So it makes sense that scientists in Spain have reasoned that probiotic bacteria could be used in fermented sausages as well.
For probiotic bacteria to work, they must survive the acids in the digestive tract. As such, the researchers focused on microbes found alive in human faeces.
The scientists concentrated on 43 faeces samples from healthy infants up to 6 months old. The samples were taken from nappies, mostly provided by midwives in support groups for new parents, and fermented into six batches of sausages.
The resulting sausages were revealed to be healthier, lower in fat and lower in salt than the non-pooey versions, with pro-biotic bacteria which would produce health-promoting effects in people.
Professional tasters said the sausages were delicious, with one scientist adding: "We ate them, and they tasted very good."
At the moment, no companies are interested in commercialising the sausages but, if future research proves successful, we could see them in supermarkets as a health-food meat product.
