  1. Dust the fish in the flour

  2. Dip the fish in the egg white

  3. Roll the fish in the shredded coconut

  4. Heat a large frying pan to medium heat with a table spoon of coconut oil

  5. When hot, add fish and turn to ensure even browning. This should take approx. 2 minutes depending on your portion sizes.

  6. Repeat in batches

  7. Add more coconut oil as necessary

  8. Serve with a slice of lemon
